Jade is a family-run business, and we’re proud to share recipes made with love. At the heart of our kitchen and bakery is our matriarch, Lucy. Jade’s menu reflects Lucy’s roots—growing up Vietnamese in both Laos and French Colonial Vietnam. As a young child in the Laotian village of Pakse, near the Thai border, she developed a deep appreciation for Thai flavors.

Her trusted sous-chef, Sy, has worked alongside her for over two decades and comes from the Luang Prabang region of Laos.

Lucy immigrated to Portland in 1975, where she raised her three children and, in the early ’90s, opened the beloved Beau Thai restaurant in NW Portland. After Beau Thai was sold in the early 2000s, Lucy traveled to the South of France to study baking—fueling her respect for French pastry and perfecting the baguette used in our signature Bánh mì sandwiches.

Upon returning to the States, Lucy teamed up with her daughter April to open Jade, combining their passion, heritage, and culinary expertise.
